Le Cabernet du Frangin - 2021 - Natural Wine - Organic Wine

This pale red natural wine is a unique cuvée, entirely vinified in our cellar in Courbevoie, using Cabernet Franc grapes, from partner winegrowers south-east of Angers who work their vines organically. It is a delicate and fruity red, the aromas evoke a Parisian evening, sitting on a terrace with a peppery dessert with fresh raspberries and strawberry jam. We sipped it with an 18-month-old Comté, set to 80s German pop. We get these grapes from the brilliant winegrowers, Xavier and Géraldine Cailleau, who work their vines biodynamically. They come from the La Seigneurie plot, a Turonian tuffeau chalk terroir. We harvest the grapes by hand and then put the crates in the refrigerated trucks. 4 hours on the road then arrived in Courbevoie we continue with the vinification. The grapes arrive at 8°C in the cellar. They are not scraped or pressed but put in whole bunches in a tank to start a carbonic maceration. This gives it its special aromas of small red berries and spices. 10 days of maceration and devatting to then let it age for 8 months in vats. We only use a very small dose of sulfur which remains within the levels of natural wines (15 mg/L in total SO2) Bottled in the cellar. Happiness in a bottle :) Natural Wine - Certified Organic Wine
