Sauvignon du Frérot - Natural Wine / Natural Wine - Organic Wine

It is a mineral and lively natural white wine. We will harvest the grapes at a partner winemaker in Touraine, then we bring the grapes in whole bunches to Courbevoie (a suburb of Paris) where they are vinified. They are immediately pressed, vinified in stainless steel vats to keep the tension. Although unusual, we decided to do malolactic fermentation to break the piercing acidity of Sauvignon and bring roundness.
