Real Conservera's canned sardines come exclusively from the surroundings of the Galician estuaries (inshore fishing). This is the pilchardus sardine, a specimen caught in the Atlantic, at the time when it contains the greatest fat and at the most suitable time of day, with traditional and sustainable gear. Real Conservera's sardines are carefully and rigorously cleaned by hand. First, they are eviscerated, removing the head, the tail and all the remains that remain in the abdomen with great care so as not to tear the belly or the skin, as happens with sardines. Afterwards, they are washed in brine and grilled one by one, to toast them as it was done in the old days and have the desired texture. They are then packed manually, taking into account their size. Once packaged, these preserves can be kept in optimum condition for 6 years. We recommend that they be stored in a dry place at room temperature to promote their durability as much as possible.
