Pea sprouts have a mild, slightly spicy aroma. The pea green (microgreen) can be used to refine lettuce or like spinach. The sprouts are suitable for Asian vegetable dishes and as a topping on bread. In Italy they are often used in pasta, risotto and polenta. They taste delicate and delicious. Due to the high protein content, they have very good nutritional value. They have a high content of vegetable proteins (25%, with all 8 essential amino acids), are rich in fiber, carbohydrates, contain little fat and many vitamins and various minerals. Pea greens can be eaten raw, pea sprouts should be blanched for at least 5 minutes before consumption. Do not eat the sprouts raw before the 4th day!
