Known for its climate and medicinal springs, this place was already famous in Arab times.
It was they who, throughout their 700-year history, terraced the mountainsides and built intricate water systems.
As custodians of this tradition, we only use old olive varieties. The processing is particularly gentle. The ecological canal system from the Moorish period is used to irrigate the cultivation terraces.
Our olive oil is only harvested by hand and cold and directly pressed in a nearby organic mill. Sanosur offers olive oil of first class quality and is fruity, fine, mild and balanced.
