The pickle has its origin in the conservation of fish in an acid medium such as wine vinegar; Later, paprika was added for its fungicidal properties and garlic for its antibiotic properties. We wanted to give the potatoes that flavor so widespread throughout the Mediterranean that accompanies fish with a mixture of vinegar, sweet paprika, garlic and onion. The result is a potato chip with a fine and elegant pickled flavor in which an overall flavor of vinegar predominates with slight nuances of the rest of the ingredients mentioned.
