RED WINE OAK THIEF OF MOONS

Variety: 100% Bobal. Alcohol: 13.5% Red matured 5 months in barrels and 10 in the bottle. Elaboration: Controlled pre-fermentation maceration with frequent pump-overs and induced cold. Alcoholic fermentation at 29 degrees Celsius for 7 days. Maturation: For 5 and a half months in French oak barrels where malolactic fermentation takes place. CATA's notes Aroma: In a still glass, the fruit aromas stand out with hints of strawberry, ripe plum and redcurrant in an intense way, vanilla appears more softly. Shaking the glass powerfully highlights the aromas of currant and raspberry mixed with toasted touches of incense and licorice typical of good French oak, integrating perfectly with the wine. Taste: in the mouth it gives an unusual freshness for a wine for aging, it maintains a good acidity, which combined with the meatiness makes this wine an appetizing drink with a smooth but persistent and balanced finish of great personality. The tannin is perfectly integrated, giving a very pleasant step on the palate. Ideal with meat stews and cured cheeses, it pairs very well with foie and the combination with dark chocolate is surprising.
