RAW cocoa powder produced in an artisanal manner in France. Without resorting to additives such as potassium carbonate, commonly used in the separation of cocoa butter and cocoa powder. This cocoa powder is made with an old variety of cocoa from Ecuador: the "Nacional", renowned for its very aromatic taste without bitterness. Nacional cocoa develops a delicate chocolate aroma accompanied by a pronounced floral and fruity taste, recognized as the “Arriba” taste. Cultivated by a group of farmers in the Esmeraldas rainforest, the cocoa trees are surrounded by lots of vegetation: lemon trees, coconut trees, banana trees, mango trees, tagüas, balsas... among others. This, in addition to contributing to the protection of the forest, gives a unique aroma to the chocolate produced from these beans. The objective of the farmers' group is to defend the work of the member farmers through: the sale of their beans at prices that allow producers to receive an interesting income, which allows them to live decently from their activity. Improving farmers’ agroecological practices. Continuous improvement of the quality of cocoa beans, through monitoring of plots, trees, fruits, post-harvest processes (fermentation of beans, drying, etc.). SolAlter is thus part of an approach of respecting the work of farmers. There is no room for large producers in this group. After the beans arrive, they are transformed into chocolate, then into powder and butter. This is made by a partner artisan chocolatier in Drôme. The butter separation process is carried out slowly and at low temperatures, in order to preserve the benefits of cocoa. The advantage of working with an artisan is that he takes care of all the processes, and adapts them to the beans he uses. This is to respect the aroma of Nacional cocoa. It is important to note that most cocoa powders are industrially produced. In our opinion, it is impossible to have an exceptional result with an industrial scale process.
