With its rich palette of flavors, nutmeg provides a spicy, peppery, and warm aroma to your drinks, pastries, savory dishes and enhances the effect of other spices. Nutmeg is misnamed because it is not a nut but the kernel of the nutmeg tree fruit. From this fruit, we use the stone (or nutmeg) and the thin envelope that surrounds it, called mace or nutmeg flower. Nutmeg is picked by hand so as not to touch the ground, due to the risk of contamination by aflatoxin (a toxic fungus). It is then peeled by hand to remove the fleshy part of the fruit. The mace and the kernel are then dried separately. The nutmeg is found inside the kernel and you can tell when it is fully dried by its sound: when you shake the kernel, you can hear a distinct clicking sound that indicates that the nut is dry. The kernel is finally opened and the long-desired nut is finally released. Harvesting nutmeg is a complex and expensive process, making it one of the most expensive spices.
