Orecchiette is a pasta from Puglia whose name means "little ears" in Italian. They were once formed with the thumb on a rolling pin to give them their original shape! Their unique flavor goes just as well with simple sauces as with more elaborate ones. Try this pasta in a traditional recipe from Puglia, orecchiette alle cime di rapa, bringing together typical ingredients from southern Italy: orecchiette and turnip tops, anchovies and olive oil.
