Pouring the tea into a glass jug before serving it in the cups is an important step in the Chinese Tea Ceremony, because it allows you to obtain a liquid of uniform color and flavor. 

In fact, the glass jug is also known as the gong dao bei (cup of fairness).   What is Gong Dao Bei The Gong Dao Bei is simply a pitcher for serving tea so that everyone receives an equally strong infusion (that's why it's called the cup of fairness).   If served directly from a teapot or gaiwan, the first cup would have a weaker brew than the last. 

The Gong Dao Bei allows you to strain the tea from the teapot or gaiwan into this jug to even out the brew so that everyone can taste the same tea.
