Green Sicilian olives crushed and ripened only with the use of water and salt, as tradition dictates. Crushing is a traditional technique that allows to preserve the original crunchiness of the olive in a completely natural way. Excellent for aperitifs, starters, first courses and fillings. Crushed with Stone these olives have a green colour with a tough non-fibrous pulp. The olives harvested during the day are subjected to a first selection to remove those imperfect olives, choosing the best ones. Once calibrated and crushed, they are placed in containers filled with brine (water and salt solution) then carefully stored.
