This vinegar is produced in France from organic red wine from French vineyards. The grapes are harvested during the grape harvest in September and October. They then undergo alcoholic fermentation to produce wine. A second fermentation then takes place to create vinegar, thanks to the reaction between the alcohol created and oxygen.
