Bruschetta, the Apulian and Italian appetizer par excellence, has been a dish known since the 15th century. Of poor, peasant origins, it was born from the need not to throw stale bread away, but to use it to prepare a simple and frugal meal. First, the stale bread was sliced and toasted over the fire. The name "Bruschetta", in fact, recalls the term "abbruscato" (toasted). After that, the Apulian farmers seasoned the bruschetta with fresh cherry tomatoes cut into small pieces, a drizzle of extra virgin olive oil, salt and oregano. This simple and delicious meal is now known all over the world and is one of the most famous and appreciated appetizers, so much so that numerous variations have been created.
