Trofie are a format of short pasta typical of the Italian tradition. Their rather particular shape recalls the spiral of a corkscrew or a wood shaving. They are obtained by twisting very thin strips of dough on themselves, starting from the centre. Their particular shape and slow-drying craftsmanship allow for a very high quality result that reproduces the excellent characteristics of fresh pasta: it does not overcook and retains sauces and condiments. Trofie are perfect with fresh and light sauces. In fact, "Trofie with Genoese pesto" is one of the most famous Italian first courses in the world.
