Honey with a thick texture, dark to very dark amber, malty taste, aroma of licorice, caramel and ripe fruit, persistent in the mouth. It doesn't leave you indifferent! Honeydew honey from the scrubland is very specific. It is different from other honeys, which are nectar honeys, produced directly from the foraging of flowers. For this honey, they forage on honeydew, itself produced by other insects. Honeydew is collected by bees from plants and brought back to the hive. Honeydew is harvested from May to September in coastal areas and wooded areas associated with scrubland. Cistus associated with calicotomes, oaks, eucalyptus etc. constitute its floral dominants.
