THEOLOGY — The story of a chosen slowness
I live against the grain. Everything is faster — production, delivery, consumption. I've decided to slow down.
Not out of nostalgia. Out of conviction: what is precious takes time. Exceptional tea cannot be produced on a just-in-time basis. It is cultivated, shaped, and passed on — generation after generation, gesture after gesture.
It is this conviction that led me, after eleven years of building a pastry shop and tea room with my own hands in Colombia, to a workshop in Nice. Not to sell tea. To give him back the time that was stolen from him.
So I looked for a way to embody this slowness — not as a concept, but as a concrete, daily, verifiable gesture.
The answer came from Japan, in the form of a stone: a black Oshima granite grinding wheel, shaped to grind matcha as it has been done for centuries in Uji. No high-speed electric shredder. No heating that destroys the aromas. A slow, patient rotation that preserves every nuance of the tea.
I receive whole Tencha leaves from a fourth-generation organic producer, shaded for more than thirty days before harvest. They only become powder at the time of order, under my grinding wheel, in my workshop in Nice. Neither before, nor anywhere else. The matcha leaves fresh, jade, alive — shipped within 48 hours, when imported powders have already begun to oxidize in a container.
I didn't reserve this gesture for matcha. I apply it to everything I select: nearly 80 specialty teas — gyokuro, sencha, grand cru teas from China and India — chosen directly from the producers, traced back to the plot. No intermediary erases the origin. No shortcut can replace the requirement.
What I offer, in essence, is simple: very high quality organic tea and matcha, some of which is ground in front of me, to order, on a stone from Japan.
For professionals — tea rooms, specialty cafes, restaurants, hotels — this translates into bulk terroir matcha, tailor-made creations and white label products reflecting your brand. The same stone. The same slow gesture. Tailored to your card.
