Eggplant caviar is a typical Mediterranean dish, best enjoyed as an aperitif. The eggplants are grilled in the oven and then mashed. This eggplant caviar is prepared with Provençal eggplants harvested at full maturity. Spreadable to be enjoyed chilled as an aperitif on toast.
