Eggplant caviar is a typical Mediterranean dish, which is eaten as an aperitif. The aubergines are roasted in the oven and then mashed. This eggplant caviar is prepared with eggplants from Provence harvested when fully ripe. To be enjoyed chilled as an aperitif on toasted bread.
