100% French wild boar rillette with DNA gin

This rillette is made from 75% French wild boar meat. Although it is the fattest game meat, it remains 5 times less fat than classic pork with a comparable taste. The Gin cuvée ADN that sublimates this recipe is 100% Lyonnais, organic and responsible. It was designed around a precise and meticulous selection of 19 different botanical aromas. These herbaceous, complex and intense aromas give a lot of character to this rillette. The juniper berry, for its part, envelops the whole of this product, bringing woody and slightly acidic touches. Finally, to bring smoothness and character to our rillette, we add French duck fat.
