SAKE FOR ALL INTRODUCTION
Wakaze (若勢) can be translated as "young force" wanting to revolutionize the sake industry. No matter how many years of sake brewing experience we have, we will continue to learn and evolve to produce sake for the next generation. With us, this comes first and foremost through experimentation and a lot of curiosity.
THE WAKAZE METHOD
We are a sakagura (sake brewery) producing sake for everyone. Trained in Japan, we created our second brewery in Paris to promote sake internationally. We believe that everyone deserves good sake to enjoy during meals, with friends and without constraints.
KURA GRAND PARIS
It is the largest sake brewery in Europe. With twelve 2500L tanks on a 450m² site, it includes most of the equipment necessary for the manufacture of sake, including a chamber for rice-koji and a pressing machine to extract the sake. Everything was built on site and custom-made. By locating the brewery in the Paris region, an important area for gastronomic culture, Wakaze holds an influential position in the expansion of sake culture.
