Cauliflower rosettes with Agnes in oil

Inspired by an ancient family recipe, our Agnese cauliflowers are the emblem of our reworking of tradition in a modern key. The cauliflower is harvested during the winter taking into account only its seasonality, it is then cut maintaining the natural shape of the rosettes which are marinated in water and vinegar, to be then seasoned with dried tomatoes and olives, just like Nonna Agnese still does.
