These are the main characteristics of the extra virgin olive oil varieties that are part of this Tasting Kit: Arbequina variety Originally from the Tarragona, Lleida and Alto Aragón area, although it is currently present in practically the entire country. It is a short and elliptical olive, small in size, which usually has a dark skin and a pulp with a marked reddish hue. It allows the production of olive oils with a fluid texture and a sweet and fruity aroma, with nuances of green apple, almond and banana. Sweet character flavor, with a practically total absence of bitter or spicy notes. Cornicabra variety It has its origin in the Toledo town of Mora, which explains why its area of greatest implantation is in the Tajo Basin. Today, it is the second variety with the largest cultivated area in our country. It has an elongated and, in a way, asymmetrical morphology, which justifies its original name. When ripe it acquires a wine red color. The oil made from the cornicabra variety stands out for its intense and suggestive fruity and aromatic nuances, reminiscent of apple and herbaceous notes. Very characteristic slight bitter touch and a medium intensity of itching, balanced in a very positive way with sweet reminiscences. Hojiblanca variety It is considered to originate from the Cordoba town of Lucena, which is why it is also known as Lucentina. It is concentrated, above all, in Central Andalusia, although it is the third variety with the largest cultivated area in Spain. It is characterized by being a rounded olive, which reaches a higher caliber and weight than other varieties, presenting a late maturation. Its name comes from the whitish color of the underside of its leaves. It offers an aroma with nuances of artichoke, freshly cut grass and aromatic plants. It has a characteristic sweet flavor, with a slight bitter touch and a very localized final spicy nuance. Picual variety Although it is an olive native to the provinces of Jaén, Córdoba and Granada, its production is widespread throughout our country, to the point of being the variety with the largest production area cultivated in Spain. It is an olive with a relatively small caliber and that ends in a characteristic peak or pointed apex, to which it owes its name. It is a full-bodied oil that offers fruity nuances and reminiscences of green olives, fig trees and olive leaves. Great personality and strength, which is clearly perceived from its bitter aftertaste and its pleasant and characteristic itching on the palate.
