Stone-free black olives in brine - Greece Kalamata

• Naturally matured, not blackened and traditionally marinated in brine. Our black organic olives of the Kalamon variety - better known as Kalamata olives - come from the area around Kalamata in the Greek region of Mani, in the south of the Peloponnese peninsula. Gently harvested and debittered in a natural way, our black olives convince with their typically spicy, intense taste. The Kalamata olive is probably one of the most famous varieties in Greece and although it weighs around 3 g it is not the largest, it can offer a lot in terms of taste. They are harvested when ripe, as soon as they have a dark, purple color, between November and February by hand so that they remain undamaged and then go through the natural debittering process in brine. Our dark organic Kalamata olives are finally bottled in a less concentrated brine (approx. 3 - 4%), which we prefer, and with a little wine vinegar and a layer of extra virgin olive oil. This traditional Greek way of pickling creates an unfavorable environment for bacteria and prevents the fruit from discoloring. The olive oil serves as a "seal"; it prevents contact with oxygen. For this top layer we use our extra virgin, mild organic olive oil. Durability: Our pickled olives always come from the latest harvest and can usually be kept for 2 years after filling! Quality features: gently harvested and carefully processed • without flavor enhancers • without artificial colors and without artificial flavors • free of artificial additives and without genetic engineering. Since it is a purely natural product, color and size differences are dependent on the harvest! Packaging: Our glasses are reusable, modern round glasses (clear glass), with a deep-drawn twist-off lid (TO 66). The glass is straight and not rounded at the bottom, which gives it a more elegant look. Later it can also be used as a herb jar, as the wide opening allows spices and salt to be removed by hand. An elegant mason jar - the lid can be heated to 100 degrees (pasteurizable) - in which about 200 ml can be filled.
