Ferdinand's Riesling Verjus Cordial

As the grapes mature, Ferdinand's notes that the color of the grapes is just beginning to change from green to yellow, a point in their development known as "veraison". At the first sign of veraison, a portion of the unripened grapes are harvested to provide better light transmission and airflow, manage energy demands on the vine, and regulate expected grape yield. Some leave the barely ripe green grapes on the ground or perhaps put them in the compost, but for Ferdinand's Verjus Cordial these grapes are collected to extract the acidic juice. Refined with regional flowers and herbs, this extract is the perfect ingredient for grape-inspired drinks.
