In the summer when vegetables abounded in grandfather's garden, and nothing was thrown away, it was a tradition in our home to prepare the Giardiniera with zucchini, cauliflower, carrots, celery, spring onions and all that the earth offered us. So we had vegetables all winter preserved in the jar. The Giardiniera is perfect to offer as an appetizer to accompany a nice plate of cold cuts and cheeses or as a side dish for meat dishes. Also, simply, on toasted bread and a good glass of wine!
