Duck gizzard is an essential ingredient in Landaise salad. A bit like making a salad with lukewarm bacon, the gizzard brings that little extra that turns you a sad escarole into a real holiday dish. In the Preserves Cabinet, it is imperative to always have a box of gizzards! To have beautiful gizzards, it is necessary to feed the duck with whole grain; the gizzard being the muscle which allows the animal to grind the grain, it is all the more developed if the animal uses it every day. This is why we always favor old-fashioned force-fed ducks, in the purest South-West tradition. Our artisanal preserves smell like the preserves of yesteryear! A little gourmet tip: there is no good Landaise salad without a nice slice of foie gras! So take advantage of our delicious whole foie gras in jars, and also sprinkle your salad with a delicious hint of white Gascony asparagus. Preparation advice: Take the gizzards out of the box; Cut them into strips half a centimeter thick. Spend three minutes in a hot pan. Sprinkle your warm gizzards on your previously seasoned salad.
