Duck Axoa is an emblematic dish of the Basque Country, traditionally made with minced veal cooked in a preparation of onions, sweet peppers, and incidentally tomatoes. In the Landes, we have less veal, but more duck, so we make a duck axoa.   Our preserved axoa (pronounced achoa) is a cooked dish that will bring the flavors of the South West to your table to delight your taste buds and those of your guests. With a slightly stronger taste than veal axoa, it is traditionally eaten with starchy foods, such as rice, fresh pasta or even simple boiled potatoes. It’s the flavor of the Basque country at your fingertips in your “Canning Cupboard”! This rustic dish, which was served on fair days, is not really codified: it is a slice of veal shoulder cut into cubes, cooked with sweet peppers, onions and Espelette pepper. . It is often associated with Espelette because a restaurant-hotel owner from this town highlighted it on his menu and made it known to tourists and journalists.
