DUCK RILLETTE WITH ESPELETTE PEPPER 150G

The rillette is the collection of all the little pieces of meat that we recover at the bottom of the pot after the candying operation (cooking the confit!).  We season, pass through the mincer, and we obtain a melting and very tasty rillette. Espelette pepper is this very particular Basque pepper that grows in three towns in the south of the Basque Country. We use it in many of our preparations and here, it deliciously enhances our rillettes! Of course, in our Landes cannery, we are concerned about our raw materials so, like all of our artisanal preserves, we favor short circuits and quality products from our beautiful region. Rillettes are a culinary preparation of pork or poultry (goose, chicken, duck) or fish (salmon, tuna, cod, mackerel, etc.).),or even shellfish (crab for example), cooked for a long time over low heat in fat. Then, the filaments of flesh come off easily and form “rillettes”. As it cools, the fat rises. Rillettes are ideal for your charcuterie platters, for your picnics, simply spread on good bread All our preserves are made with fresh products and meat of French origin, in our small artisanal cannery located in Les Landes. The plus of the product: the Espelette pepper which spices up these rillettes without altering the taste.
