We select only our best olives from the native "Coratina" variety to guarantee an exceptional raw material for our organic and sustainable oil.   We pay attention to our campaign, not using additives or chemical fertilizers, fully respecting the environment and biodiversity; we take care of every step from harvesting to immediate processing in the oil mill, all cold, so as not to affect the aromas and nutraceutical properties of our Coratina olives, very rich in polyphenols.  The unique, full and unmistakable flavor of our oil means that the sweet almond aftertaste marries elegantly with the bitter tones and spicy notes, leaving a rounded and enveloping finish.   The fragrant aromas of artichoke and wild herbs from the Murgia plain and the balanced hints of bitter and spicy ensure that our oil enhances the flavors of every dish, for example put raw on orecchiette with cherry tomatoes and fresh basil, or soup legumes and spelt, mashed beans and chicory or simply enjoyed on good homemade bread.
