150g Anchovy fillets from the Engraulis encrasicolus family, Spring fishing on the coast of the Cantabrian Sea, from the most famous Spanish town where one of the best anchovies in the world is made, Santoña. Packed in olive oil, this tin has 10 large fillets, very boneless, reddish-brown in color with a balanced salt level and a lingering, pleasant aftertaste. And they are never identical from one year to the next, although they do maintain the typical flavor and saltiness of Santoña.
