It is a pink Pedro Ximénez mushroom mousse with baked apple, caramelized onion, beetroot, kombu...it is a mousse that melts on the palate, sweet, with umami. We love. It is a recipe from Miriam Cózar and that we can already find in some Michelin star restaurant that use them in their dishes. The mushrooms selected for this great product have been our pink mushrooms, shiitake, black thistle and mushroom. The objective is to give pink, black and beige tones to the marinade, combining unique flavors and medicinal properties. It is a vegan product.
