It is in a small hamlet located in the heart of lower Auvergne that the genesis of the SANTALIM project was born.
Isolated during the confinement due to COVID 19, during a barn cleaning, we discovered a grain grinder, probably dating from the 1900s / 1920s. After restarting this cereal grinder, we carried out tests with rice and barley that we had available.
Having good knowledge in the durum wheat processing sector, we have, in a playful way, started to develop products. Then a question arose:
Why cereals such as rice, spelled, barley, buckwheat, rye etc., cereals produced in France, with interesting nutritional values and having an affordable cost, have not benefited from developments making them easily consumable?
Today, these cereals are available on the market, but mainly in the whole grain state. Their cost is high, their preparation tedious, with several hours of soaking and cooking times of several tens of minutes!
It is from this observation that the SANTALIM project was born. Develop a process that would offer consumers the possibility of having a real choice in their consumption of cereals.
