Home-grown paprika from La Vera, handcrafted, faithful to tradition and using techniques passed down from generation to generation. A unique paprika.
The production of Sifón de las Monjas is a complete cycle. Our team is present in all phases of production. From the selection of the seeds to the grinding of the pepper, going through the harvest and its smoke-drying.
We make our products on our farm in the region of La Vera, in the province of Cáceres, Spain.
These are some of the artisan procedures that make us unique:
• Limited production. Our paprika comes exclusively from the peppers harvested on our farm
• Manual collection. We only select the peppers that, one by one, have reached their optimum degree of maturity.
• Smoked with oak wood. Our paprika acquires its characteristic smoky aroma during the drying process, which takes place in our stone dryers heated by an oak wood fire.
• Stone ground. We grind our peppers in century-old stone mills, respecting grinding techniques used for generations. We only use the peel of the pepper to make our paprika.
The sum of these processes makes our paprika a unique product, with an intense color and uniform texture, stable over time and with a penetrating and balanced aroma of oak wood.
