Nothing is lost, everything is transformed. From the end of autumn, the two local aubergines “Bou Shawki” and “El Homsi” experience a second life. Put in brine, then stuffed according to a recipe handed down from generation to generation, they are carefully stored in cans in anticipation of the long winter months. Traditionally led by rural women, the making of "makdous" plays an important role in their emancipation. Grown in the Lebanese region of Qaa, on fertile soil enjoying hot and dry summers, our eggplants are considered the best in the country. They benefit from an ideal climate, conducive to the full blossoming of their flavors. Eggplants are stuffed with walnuts, sweet peppers and garlic.
