This pasta is made up of these delicious balls of durum wheat semolina and water typical of Sardinian cuisine. The main characteristic of this special pasta format is that it can be used as a side dish, as a salad at room temperature, or it can be treated like a risotto, cooking it with slow additions of broth. The fregula is perfect with tomato and clam sauce and a pinch of bottarga. The pasta is bronze drawn and dried according to the traditional method, at low temperature and for a long time. The use of bronze dies enhances the natural flavor of the wheat because it gives the pasta its traditional and pleasant porosity which retains the sauces and gently caresses the palate. A part of the pasta is toasted again in the oven, thus guaranteeing a percentage of darker colored Fregula inside each package, which guarantees the unmistakable particularity of this pasta.
