The olive oil used as a covering liquid provides oleic acid. The union of both gives rise to a food that is extraordinarily beneficial for health. Tuna logs (sp. Katsuwomus Pelamis) have a pale, slightly pinkish color. Well-defined layers or flakes of compact and juicy meat are observed. Mild flavor but with personality, different from other canned tuna.      ORGANOLEPTIC CHARACTERISTICS Type of tuna with firm, red meat and very pleasant to the palate, highly appreciated in Japan where it is known as katsuo (カツオ or 鰹), a name that has given rise to the genus Katsuwomus Pelamis.      Handcrafted preserves.
