Coconuts come from the "Coconut Triangle" north of Colombo where particularly aromatic nuts are produced. Coconut flour is obtained from fresh coconuts, the flesh of which is defatted, then finely ground, to give this flour rich in fiber. It can be combined with other flours and its light coconut taste will sublimate both sweet and savory preparations, with an exotic note.
