A tablespoon of honey vinegar can give almost any dish a pleasant kick of freshness and bring out the flavors that are present. Our honey vinegar is phenomenal in gravy! Honey vinegar is the perfect base for sweet and sour sauces: How about a unique honey vinegar syrup with vanilla ice cream? Or rather as a hearty barbecue sauce? The honey vinegar is also perfect for refining all kinds of barbecue marinades. Its acidity helps break down the protein structures in the meat. This makes it more tender and even juicier. Made from an ancient recipe The ancient recipe is simple: honey and spring water are used to brew honey wine - mead - which is then fermented into vinegar. Our honey vinegar has 3 types of honey to call its own: thyme, heather and blossom honey give it its intensive aroma. After aging in the barrel, our vinegar does not undergo any further treatment. This creates a honey vinegar with a naturally high acidity of around 6-7%. An average honey vinegar, on the other hand, only has around 5% acidity. As a result, you only need the smallest amounts when cooking. Since no temperatures are used throughout the manufacturing process that could destroy the aromas of the honey, it retains its full flavor. Our honey vinegar does not contain any artificial additives. In this way, it preserves its natural purity and premium quality. Monemvasia: The Invisible Fortified City Monemvasia, is a breathtaking fortified city with an imposing past, which is one of the most beautiful undiscovered travel destinations! Monemvasia belongs to Laconia, a region in the south-eastern part of the Peloponnese. Here, just a few meters from the coast, in the middle of the sea, lies a solitary boulder with a small settlement: Monemvasia was built at the foot of imposing rocks that rise steeply from the sea. The city was built by the Byzantines in the 6th century to protect themselves from enemy attack. The sea, as a natural "moat", offered the perfect first line of defence. Even more safety was provided by the fact that the city on the huge sea cliff is not visible from the mainland. This allowed the locals to evade enemy attacks. True to the motto: "If you are not seen, you will not be attacked..." The only way to reach Monemvasia was by boat. Later a single narrow path was built to connect them to the mainland. This is how the city got its name. The Greek moni emvasia (μόνη εμβασία) means “only access”. All of the protective measures were successful, because the many attempts at conquest failed.
