The ripe, heady creaminess of the mango is held in check with the crisp, almost-grassy-sourness of fresh green apples to create a wonderful partnership of zingy, fresh fruity flavours! This partners exceptionally well with the bold flavours of blue cheese but can add lightness to spicy salads too, especially those with a sprinkling of peanuts, almonds or walnuts.
