Piece to be sliced Our dried wild boar fillet reveals all the aromas of this tender and subtle meat.  The recipe and the know-how used to create this unique piece will allow you to discover “natural” wild boar.  Our fillet is first salted then smoked before being rubbed with pepper like a lonzo (famous Corsican charcuterie).  The drying process of 2 and a half months produces delicate and tender meat.
