
A unique shochu is made by blending sweet potato and green tea: the result is a drink with a strong character typical of sweet potato-based shochu, combined with the incomparable sweetness, finesse, and beautiful umami brought by the tea. The Chiran Jozo Distillery is located in the Chiran region, which is extremely renowned throughout Japan for the quality of its tea. In addition to running the distillery, owner Mr. Mori himself cultivates several plots of tea. Faced with the renewed interest in quality shochu in recent years, Mr. Mori had the idea of combining his two activities to create a new alcohol! The green tea used in Chiran Tea-chu is a premium first-harvest sencha tea (harvested in April) in order to release as much umami as possible. The leaves are added directly to the vats with the sweet potatoes during the second fermentation, which lasts around ten days. The tea cultivar used is generally Yabukita.
