The meeting: During the visit of Jérôme, boss of the boat the Black Pearl, to our family restaurant this summer, he told us about his selective fishing, respectful of the resource and very qualitative in front of the coasts of the island of 'Oléron. From this exchange and this common passion for beautiful products was born a product that we transform fresh, naturally by our team of enthusiasts in our cannery workshop located in La Cotinière, 100 meters from the port. The main challenge for Jérôme and his team of passionate sailors is to find outlets for this local artisanal and quality fishing throughout the sardine season (from June to November) whereas today there are no outlets only in July/August during the tourist season and only every two days so as not to see the auction prices collapse and see their work devalued. The quality of the fishing: This is due to the fact that the sardine is caught just before the boat returns to port at a very close distance from the coast. The volumes caught are low and the trawling duration is very short, which means that the fish are not damaged. The fish is frozen on board immediately after sorting the different sizes. The fish is kept in a cooler until disembarkation a few hours later. The quality of the processing: We process them a few hours after landing to enhance the taste of the fish and guarantee the best preservation. We work in light brining and with quality organic olive oil. Our know-how in heat treatment allows us to cook the fish correctly in order to keep the flesh very tasty. Our commitment: To highlight the quality of the chain from the trawl to the plate with short circuit processing and a very natural and qualitative approach at each stage. Our wish is to guarantee a fixed purchase price during the season and above all to make this unique know-how known.
