Oltresole Eucalyptus Honey is an Italian artisan product. The consistency of this honey is compact and the color is amber that turns towards gray with an even more compact consistency. Its crystallization takes place in a few months and the particle size is very fine. The flavor is strong, intense and particularly balsamic: for some it recalls mushrooms, wood and curry while others feel the taste of helichrysum and licorice candies. However, the taste is not too sweet and the acidity is also moderate. Eucalyptus honey is mainly used against coughs and to counteract common colds. With its particular and spicy flavor it is perfect to accompany very aged cheeses such as Parmigiano Reggiano or Grana Padano to make Yogurt more delicious and to sweeten tea. PAIRING: Eucalyptus honey is however also widely used in cooking. FUN FACT: Eucalyptus honey, as the name already suggests, is produced by bees from an evergreen plant native to Oceania the Eucalyptus (botanical name deriving from the Greek "well" and "hide" due to the fact that its flowers are entirely hidden by the petals until the moment of flowering) imported into Europe only in the 19th century.
