The flowers are harvested by hand, collected in baskets and gently dried in the shade through the targeted use of the prevailing sea breeze. The local subspecies of the Greek oregano (Origanum vulgare hirtum) from Lemnos is characterized by the thymol chemotype. This grows exclusively in the latitude of Lemnos, Samothrace and Athos. The oregano has a unique, strongly spicy taste with over 69% thymol content. The product consists of at least 92% flowers and is free from dust (soil), stems and large leaves.
