Bay leaves come from the laurel plant, an evergreen shrub that grows slowly in warm climates. They are a very recognizable herb due to their distinctive flavor and scent. They have a floral and herbal scent reminiscent of oregano and thyme. Bay leaves are used fresh or dried in cooking in a variety of dishes. Dried bay leaves have a more intense flavor than fresh leaves. Dried bay leaves can be used to refine the taste of sauerbraten, potato stews, soups and sauces. They are usually steamed in the bowl but removed before serving because of their bitter taste. Bay leaves are also great for making tea. A hot cup of aromatic bay leaf tea can be very soothing. Put 3 bay leaves in 500 ml of boiling water and let stand, covered, for 5-10 minutes, depending on your taste.
