Creamy octopus with organic dried belly

The octopus is a mollusk of the cephalopod family. Present in the Bay of Biscay, it is a consumable product all year round. Its iodized smell, its delicate flavor and its soft texture allow you to appreciate the unique taste of octopus. AMBROISIE has made a recipe made from 50% octopus from the Atlantic coast from the Concarneau auction (29). Organic dried belly is produced by Florence RESSE from the Ferme d'Arracq in the Landes (40). It is a smooth and creamy recipe with a lemony touch that will highlight the “typical” taste of octopus with a hint of oregano. We finely chopped it to obtain a silky texture. The creamy octopus can be enjoyed on fine toast and can also be served with pasta and/or rice.
