PEARL SPELLED

It is a cereal that comes "dressed" and that must be hulled before it can be pearled. The pearling eliminates the external layer of the caryopsis and this allows the cereal to take on a lighter color while maintaining the nutritional principles unaltered. It is an excellent alternative to rice, both for hot preparations such as farrotti and for cold salads. In winter it is often used in vegetable and cereal soups. It has a high content of selenium, phytic acid and also helps intestinal transit.
