Herbaceous Selection: Oil cold extracted from olives harvested at the start of the season and immediately pressed. On the palate, a slight bitterness and light spiciness. Vegetable aromas that are long on the palate and well distinguished (artichoke, tomato, tomato plant, green banana…). To be used especially with raw vegetables (tomato, cauliflower, carrot…), green salads, fatty fish, white and starchy meats (potatoes, pasta, rice…). In the heart of Crete, in the region of Peza, where the mountains meet the clouds, extra virgin olive oil has been produced since Minoan times, more than 5,000 years ago. The rich soil of the region, the appropriate altitude conditions and microclimate are ideal for the cultivation of olive trees. This Cretan know-how, acquired through experience and discussion, is transcribed in this PDO Peza where respect for the environment and traceability guarantee the excellence of the work of this passionate producer. This oil is delicately sweet and fruity, and its scent lets out a discreet peppery touch that pleasantly surprises.
