Off the beaten track, this "dark milk" is unclassifiable: halfway between dark chocolate and milk chocolate. In our factory, the beans are roasted over a gentle heat, slowly ground with a stone mill and matured for several weeks. A touch of caramelized milk adds roundness and deliciousness to this exceptional bean from the Finca Sofia farm in Ecuador.
